Two Indian inspired dishes come together in this vegan dinner. While we suggest a yellow curry blend and a garam masala, if you want to only buy one bottle of spices just choose your favorite and use it in both of them.

Squash Lentil Dal

Squash is roasted and scooped in dollops for the final simmer of this easy dal. Minimal ingredients + simple preparation = nutrient packed vegan main dish. Substitute your favorite curry blend for the spices if you are feel like a slacker. Red lentils cook up much faster than the other varieties, but whatever lentils you have on stock can work well.

Curry Brussels Sprouts

Bright, golden seasoning dashes up these little baby cabbages and cashews as they roast in a splash of olive oil. The nuts are entirely optional, but add so much to the dish. Especially since they soak up the curry as well.
