The next two weeks are packed with Thanksgiving goodness: turkey, sides and everything in between. However, I want to ease you into the Thanksgiving festivities. So this week will be a celebration of Autumn that could overlap with Turkey Day, but is not entirely dedicated to it.

Now, for this week’s meal plan I thought we could explore cuisine that is not exactly Americana. This quick stir-fry uses the Asian azuki bean as the protein, rather than meat or tofu, paired with just a couple veggies in the Azuki Broccoli Stir Fry.
With a simple ode to India, wrap your hands around a steamy bowl of the Squash Lentil Dal with Curry Brussels Sprouts.
The Dal would also be lovely with the Mango Chutney Deviled Eggs for lunch on the go or with the Ginger-Coconut Calamari, Lemon-Ginger Cauliflower and Coconut Chard. Mix and match all of these dishes to create a new dining experience every other night.
Finally, let’s try a bit of Apple Cider Glazed Pork with Apple Persimmon Stuffing & Brussels Sprouts & Bacon Sauté. Both of these side dishes would be lovely with a special upcoming holiday, too.
