Azuki Broccoli Stir Fry over Brown Rice

Start simmering the brown rice. Slice the broccoli and any other vegetables that need stir fry love. In the final 10 minutes of cooking the rice, start to saute the broccoli. Add the liquid and beans. Finish and serve altogether.

There are several methods for preparing rice. Brown rice especially is a bit more time consuming as it still contains the nutrient packed outer grain. This recipe contains three different methods for preparing brown rice. Try them out and stick with the one that produces the rice just the way you like it.

These methods can work for long, short, medium or other types of brown rice.

Azuki Broccoli Stir Fry

Rice & beans are often reserved for latin cuisine, but this Asian twist is well worth it. The azuki bean is typically enjoyed in chinese desserts, especially as a red paste. Give them some savory love as the star of a stir-fry. Another option is to substitute small red beans or edamame for azuki.
