Sweet Potato & Black Bean Quesadilla

Leftover cooked sweet potatoes and black beans are perfect for a vegan quesadilla. Add cheese if you love it, otherwise mashed & cooked sweet potatoes help seal the tortillas together.

Ingredients

  • 2 tortillas, corn or small flour
  • ½ cup black beans
  • ½ cup sweet potato, mashed & cooked
  • ½ cup spinach, optional
  • 2 tablespoons cilantro, washed & chopped, optional
  • 2 tablespoons queso fresco, optional

Serving Size: 1 Person



 

Preparation Instructions

Heat a skillet over medium heat.

Spread the mashed sweet potatoes on each tortilla. Top with the black beans and spinach. Add the cilantro and/or cheese, if using.

Heat in the skillet for about 3-5 minutes on each side until lightly golden and hot in the centers.
