French Lentils with Sausage & Mascarpone Greens

Preheat the oven. Sort through the lentils and start to simmer. Once they are started toss the sausage in the oven. Wash, dry and chop the greens. Slice the sausage when it is done in the oven. Place in the pan to saute. Once the sausage and lentils are done, keep them warm and quickly saute the greens in the pan and finish by melting in the mascarpone. Serve together.

French Lentils

The lightly dressed French lentils are inspired by Julia Child, as they use shallots, dijon and fresh herbs to enhance their flavor. French lentils have a slightly better integrity than the red or even brown lentils which become soft quickly. Regardless, avoid overcooking your lentils to avoid mush.

Start with your favorite sausage. Cook it in the oven for about 10 minutes. Remove, slice, and saute until cooked through for a simple addition to pastas, soups and to accompany a vegetable feast.

Mascarpone Creamed Greens

This simple sauté of greens, becomes creamy goodness with a couple dollops of mascarpone cheese. If you can’t find the tasty Italian cream cheese in your speciality cheese section use cream cheese instead. The flavor will be different, but you will still have the lovely texture.
