Seafood Enchiladas with Chipotle Delicata Squash

If pairing with the Chipotle Delicata, start by roasting those first. Than create the enchilada filling. Wrap up the enchiladas and bake. Serve with some of the Mexican toppings if desired.

This lovely narrow squash does not require peeling to enjoy it roasted as the skin is fairly thin. Tossed with chipotle and a pinch of cinnamon takes it from simple to fabulous.

Packed not only with tastiness from the sea, but these enchiladas love up spinach & mushrooms, too. Use corn tortillas to make it gluten free. Double check Seafoodwatch before making your fish purchases, most likely farm-raised tilapia, US Shrimp and most wild-caught crab are your best bets for this dish.
