Week of January 18, 2015

Sparkly citrus paired with creamy avocado always brightens my mood when I start to feel the darkest days of the year weighing on me a bit more heavily. While these foods tend to travel from further distances than I typically do, I consider them special treats in the midst of my more local diet. Feel free to indulge in building a meal around a Citrus Avocado Salad with a side of simple Quinoa Patties & Tahini Sauce to start this week.

An easy salsa of Citrus & Avocado make several meals this week more delightful including the Black Bean Tacos or the Breakfast Tacos.

A soul satisfying Black Bean Soup is also on the menu. Try pairing them with sunchokes aka Jerusalem artichokes chopped into this Sunchoke Salsa. A handful of Kale Chips or Homemade Tortilla Chips will complete the meal.

More local seasonal delights include fennel and turnips. One of my favorite ways to love each of those is in the Braised Fennel & White Beans. Pair it with the Chopped Veggies & Lentils for a vegan feast of delight. It can also be blended smooth to become the Fennel, Turnip & White Bean Spread that is paired with Almond Herb Crackers for lunch.

Comfort food is high on my list lately and the Sun-Dried Tomato Meatloaf is just the ticket. Mix it, pop it in the oven and then cut up Sweet Potatoes & Florets to go alongside. It will come together fast, but it will take its time in the oven as it cooks into goodness.

Crab is still in season in many places. I am a bit land locked (although, I enjoyed some amazing legs over the holidays) but I can still find some crab where I live to stuff into these comforting Seafood Enchiladas. Matched with Chipotle Delicata makes them perfect for this time of year.

Finally, since smoothies are still popular this time of year, I am sharing my personal favorite: Banana Nut. Why do I love it so? It is simple & packed with protein which helps me get a much happier start to my morning with a bit of fruit for energy. too. Serve it with a steamy bowl of PBJ Oatmeal to balance a blustery day.
