Coconut Rice

Brown rice is steamed and simmered in either coconut juice or the coconut liquid that may be leftover when cooking with just the “cream” of the full fat coconut milk. Just remember not to shake the coconut milk and the cream will scoop off easily.

Ingredients

  • 1 can coconut milk, or 1 cup coconut juice
  • ½ cup brown rice
  • ¼ teaspoon salt

Serving Size: 2 People



 

Preparation Instructions

Avoid shaking the coconut milk. When the can is open, scrape out the cream topping and set the cream aside for another use.

Now, measure the remaining liquid. Add enough water to make 1 cup total. Combine the brown rice, coconut juice and salt in a saucepan with a lid.

Bring up to a simmer, reduce to low and cover with the lid. Cook for about 40 minutes. Check, fluff. If the rice is still fairly hard add a splash of hot water, cover and continue to heat until the rice is cooked the way you like it.
