Cheesy Scramble & Guacamole

If you want to make the guacamole in advance or have leftovers from dinner the night prior, simply squeeze an extra skirt of lime juice across the top and then press plastic wrap on top to ‘seal’ it in. Next, whip up your cheesy scramble and dollop as much guac on as you desire.

Simply Guacamole

With only a few ingredients this easy guacamole highlights the flavors of the avocados. This is a great base and if you like additional spice or flavor, start with this and add to your heart’s content. When storing, squeeze a bit of the lime on top and the color will retain better.

Cheesey Egg Scramble

Scrambled eggs but a bit more fun dressed up with cheese and whatever veggies may be available. This basic recipe uses green onions and a bit of cheese. Feel free to use most any cheese in your fridge in your fridge, even the remnants of a fancy one will be great. Try goat, parmesan, pepper jack, dill havarti, brieā€¦ what will you do?
