The Food
We are entering a month that is often shadowed by cold & dreary days. For me, I am going to try to embrace it and find love throughout every day. That’s my plan, we shall see how I do.
To start it off right, I am excited to share a few dishes I have been loving up lately. I am just crazy for these Dukkah Brussels Sprouts which pair perfectly with the Saffron Baked Pilaf that is dotted with goodness such as dried apricots & pistachios. Although, my favorite part is that it is tossed in a casserole dish, then into the oven, where I forget about it for an hour until it is fluffy, tender goodness. The Smoky Garbanzo Beans complete the meal as they add their own bite and flavor.
Winter often brings Split Pea Soup fogs. Embrace it with the actual, easy to prepare soup. But, brighten it up with Caramelized Lemon & Pistachios with a simple easy Lemon Spinach Salad. And a bit of French Bread for dipping, too.
The Superbowl is coming and there are plenty more opportunities to dip, snack and bite your way through the week or through the big game. Harvest Chili on Baked Potatoes with Squash Nacho Cheese is one possibility. While the Beer Braised Onion & Bison Burgers with Blue Cheese Salad and Sweet Potato Fries are another.
For some dip-able goodness whip up the Feta-Guacamole, Black Bean Dip and the Squash Nacho Cheese. Dip them with Homemade Tortilla Chips, too. If you have extra green chiles, they will play a starring role as the spicy accompaniment of the Orange Roasted Chili Salad.
For some finger game food, these Coconut Shrimp dipped in the Avocado Cream or the Spicy Asian Chicken Wings are just perfect.
Finally, beyond being the month of love, there is certainly a whole lot of chocolate everywhere too. Satisfy your chocolate tooth with any or all of these treats, including the Chocolate Granola, Cocoa Dusted Almonds, and Cacao Almond Truffles. There will be plenty ways to enjoy all of this chocolate goodness, whether they are gifts to your loved ones or your own sweet belly.
