Caramelized Onion Quesadillas

Caramelizing onions can take awhile, so the next time you make them, double the batch and save the extras for these quesadillas. Toss in other veggies as available, such as greens or roasted veggies. A touch of smoked paprika gives this an extra layer of flavor.

Ingredients

  • 1 onion, thinly sliced
  • 1 teaspoon olive oil
  • 6 tortillas, corn or small whole wheat
  • cup cheddar cheese, shredded

Serving Size: 3 People



 

Preparation Instructions

To caramelize the onions:
Thinly slice the onion. Heat the olive oil in a skillet over medium heat. Add the slices, increase the heat to medium-high and saute lightly for about 15 minutes until the onions are wilted and starting to pick up color. Add a splash of water if they start to stick to the pan.

Warm the corn tortillas in a separate skillet over medium heat on both sides until warm. Add the cheese to one side, top with the caramelized onions and finish with the other tortilla. Sear on each side for about 5-8 minutes each until lightly golden and the cheese is melted and gooey.

These pack up nicely to go and can be enjoyed warmed briefly in a microwave or toaster oven.
