Caramelized Quesadilla with Runny Eggs and Raspberry Radish Salsa

Caramelize the onions or use leftover caramelized onions. Toss together the salsa. Assemble and sear the quesadilla. Once the quesadilla is gooey and melting, sear the egg. Serve the quesadilla with the egg on top and the salsa alongside.

Caramelized Onion Quesadillas

Caramelizing onions can take awhile, so the next time you make them, double the batch and save the extras for these quesadillas. Toss in other veggies as available, such as greens or roasted veggies. A touch of smoked paprika gives this an extra layer of flavor.

Easy Runny Eggs

We like a runny egg yolk in my home, but sometimes flipping an egg over easy will increase the risk of the yolk breaking and inevitably cooking the whole darn thing. This method makes a simple fried egg a bit easier to master without the flipping.

Raspberry Radish Salsa

Radishes and raspberries are tossed together to brighten up any simple protein or meal. Cilantro gives a mexican element, but mint or parsley can be substituted for variation.
