Raspberry Radish Salsa

Radishes and raspberries are tossed together to brighten up any simple protein or meal. Cilantro gives a mexican element, but mint or parsley can be substituted for variation.

Ingredients

  • 8 ounces raspberries
  • 4 radishes
  • 1 tablespoon cilantro, finely minced
  • 1 tablespoon shallot, or red onion, finely minced
  • 1 pinch salt
  • 1 lime, zest and juice

Serving Size: 2 People



 

Preparation Instructions

Place the raspberries in a bowl of cold water. Gently scoop out the raspberries and drain them. Spread out on a towel to dry. Take care with this delicate berry.

Trim the radishes and wash well. Thinly slice the radishes, stack up and thinly slice again in matchsticks. Finely mince.

Toss together the radishes, cilantro, shallots, lime zest & juice.

Fold the mixture with the raspberries and a pinch of salt.
