Avocado, Egg + Greens Crepes

Crepes are highlighted with a simple combination of goodness tucked inside. Practically a meal in itself for any time of the day. Skip the cheese and use milk or water in the crepes to make these dairy-free. Crepes are also easy enough to make gluten-free with your favorite flour mix.

Ingredients

  • 4 crepes
  • 3 eggs
  • 1 avocado
  • 4 slices jarlsberg cheese, optional
  • 2 teaspoons dijon mustard, or more to taste
  • 2 cups baby spinach, or your favorite baby greens, washed and dried well

Preparation Instructions

Prepare the crepes, if not already done.

To prepare the avocado: slice along the middle, turning the avocado as you go. Twist the two halves apart and gently push out the pit. Slice into the flesh of the avocado, avoid piercing the skin on the other side. Scoop out the flesh with a large spoon, season with a pinch of salt & pepper.

Once the crepes are complete, warm a skillet over medium-low heat. Whisk the eggs until well combined and season with a pinch of the salt & pepper.

Swirl the butter in the pan. Once it is melting and sizzling, pour in the eggs. Reduce the heat if they start to sizzle & sputter too quickly. Gently fold the eggs together for about 30 seconds until they are cooked through.

Open up the crepes, spread with a bit of the dijon mustard all over, adding more as desired. Lay down a slice of cheese, if using, top with the eggs, avocado, and baby greens. Fold over each crepe and enjoy!
