The Food
This year, Mother’s Day also marks the actual day that I became a mom. Somehow it makes this day a bazillion times more special to me that I get to share it with the sweet girl who changed my life so beautifully. This week is dedicated to several of the meals she loves… or doesn’t realize she loves, yet.
I created these Strawberry Almond Lentils for her very first birthday party and it has been a family favorite ever since. Pair it with the simple Layered Spring Salad and Basil-Lemon Dressing which also made their first appearance at her stuff-your-face-with-cake first birthday party.
She loves mangos (as does her brother who just added the word “mango” to his rather short list of words he can say clearly) and I know that she will be thrilled with these Mango Brie Quesadillas and the Roasted Garbanzo Mango Salad for lunch.
My sweet Juliette often requests crepes. Which thrills me to no end. While we love them simply sprinkled with lemon & sugar, they are even more exciting filled with Lavender Yogurt + Strawberries. Savory crepes are also a favorite around here, especially when stuffed with goodness such as Avocados, Greens + Eggs.
With spring halfway through, the vegetable possibilities keep growing. A few of my favorite unique sides include: Carrot Top Carrots, Roasted Chard Stalks with Creamed Greens, and Creamy Radishes. Salads are also prevalent including the Honey Mustard Kale Salad and the Balsamic Strawberry Asparagus Salad.
She shares her love of Eggs in a Hole with her Mimi, but she is always ready to have a smoothie too and this Kale Date Smoothie is a fave.
Finally, for her big birthday dinner, she has requested meatballs, these ones are Mega Meatballs paired with simple spaghetti or fancy your pasta up with Goat Cheese & Kale.
