Dust off your grills! Memorial Day is coming soon, which means summer food is tip-toeing around the corner ready to fill you with goodness straight from the grill.

Quite possibly my favorite vegetable to toss on the grill are Artichokes. If you have yet to do it, this is the time, artichokes are in season, ready for magic on the grill and they are dippable goodness when paired with the Avocado Cream and a pile of the Chopped Lentils & Veggies.

Next, slap a few marinated gigantic mushrooms on the grill and these satisfying Portabellos Burgers will be yours. Pair them with the Artichoke Kale Slaw and Garlic Scape Tahini.

Trout, absolutely loves a quick kiss on the grill making it super fast and easy especially when paired with the gorgeous Cherry Salsa. Pair it with one of the most popular recipes on this site, the Grilled Potato & Greens Salad.

Between the beautiful produce that is rolling our way and the picnics, barbecues and gatherings you are attending soon, here are some of my favorites to made ahead or take on the go: classic Macaroni Salad, Massaged Kale Salad, the Chopped Lentil Salad and the latest edition the Creamy Feta, Snap Pea & Strawberry Pasta Salad.

Even though it doesn’t go on the grill, this Herb-Ricotta Chicken made a huge splash on my Facebook page and I am thrilled to finally share it with you. It is especially perfect paired with the Strawberry & Snap Pea Pasta Salad. Take extra snap peas and stuff them into these Goat Cheese & Herb Snap Peas.

For breakfast, make this lovely Strawberry Cheesecake Oatmeal Bake the night before along with the Strawberry Frozen Yogurt (hint- also perfect for a Memorial Day celebration!) For a savory morning, whip up the easy Mushroom Skillet Strata.
