It will satisfy the meat-lovers to the Vegans as this main dish salad is excellent for a quick gathering of friends since everyone can make their own. Omit the Taco Beef if you are going meatless as it is a complete meal without it. Or try substituting Tofu or Tempeh and season as you would the beef if you feel you need a little extra something.

Ground beef seasoned with Mexican spices ready to go into Tacos and more. Substitute ground turkey, bison, or whatever ground meat you may prefer.

Set your Taco Salad up like a salad bar. Each diner will be able to assemble their own to create their favorite combinations, which is especially great for kids. Add any other seasonal ingredients your family loves such as peppers, more greens or shredded roots.

Cilantro Dressing- Simple

Blend together Cilantro with a few simple ingredients for a bright and tasty dressing or sauce to drizzle on Mexican dishes.

This is a great way to use up Cilantro when you have too much and can be frozen for a later use.

Chipotle Cream

Whenever you use sour cream on a Mexican dish, try this instead to add a bit of spice and cooling at the same time. We use yogurt to get a bit more natural acidophilus in our diet, but sour cream works too. You can buy chipotles in adobe sauce in a can. Just blend the peppers to make a sauce that is easy to use in recipes. If you want to skip the can you can find tasty chipotle powders such as from the Savory Spice Shop as well.
