Roasted Okra

These make for a delicious unique bite. Crispy on the outside and then almost melting into your mouth. The smaller the okra the less likely they will be woody in texture. The stems of the tiniest okra even become tender in this simple side.

Ingredients

  • 1 lb okra, wash & dry
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Serving Size: 2 People



 

Preparation Instructions

Preheat the oven to 375.

Be sure to really pat the okra dry to ensure the crispiest, not slimy, edges.

Toss the dry okra on a baking sheet with olive oil, salt and pepper.

Spread out and roast for 20-30 minutes until they start to turn golden.
