Leftover roasted potatoes can be warmed briefly in the oven as a side for breakfast. Either way start with the potatoes and as soon as they are done make the eggs. It takes awhile but the active work is minimal, especially if you start with those tiny potatoes CSA’s so often provide.

Roasted Potatoes

Tossed in olive oil these potatoes roast up to be soft on the inside and crispy on the outside.

Easy Runny Eggs

We like a runny egg yolk in my home, but sometimes flipping an egg over easy will increase the risk of the yolk breaking and inevitably cooking the whole darn thing. This method makes a simple fried egg a bit easier to master without the flipping.
