Curried Pumpkin Soup with Apple Quesadillas

1. Prepare the soup first.
2. Slice the apples & cheese.
3. When the soup is starting to simmer after being pureed, assemble the quesadillas and sear.

To take on the go: keep the soup warm in a thermos and wrap the hot quesadillas in foil and a towel. If you have access to a toaster oven or microwave, even better.

Curry Pumpkin Soup

This creamy, smooth soup has a hint of curry and a pinch of nutmeg. Canned pumpkin will get you by, but roasting fresh pumpkin is easy enough, too. Add a drizzle of yogurt and sprinkle of pepitas and scallions to complete this soup.

Its simple, but surprisingly lovely. I won’t pretend this is complicated. Just use a fabulous apple and your favorite cheddar. Enjoy.
