The Food
October is certainly all about the pumpkin, but Halloween week really tends to spotlight the possibilities. I challenge you to go beyond the pumpkin and examine the jack-o-lantern’s siblings that tend to have richer flavor + textured flesh such as hubbard, sweet meat, cinderella, cumshaw, and more. Most of these varieties can be cut in half or big parts and then roasted into soft, sweet goodness to be enjoyed throughout the week.
The Curried Pumpkin Soup is a popular trick-or-treat night meal in our house. It is simple to put together with an Arugula Salad, which gives me more time to focus on my little candy loving costumed cuties, instead. The Candied Chipotle Pepitas are a great way to use the seeds after scooping and carving a ghoulish pumpkin.
Those sweet + spicy Pepitas could also decorate the Roasted Squash + Bean Tostadas. But, it is also nice with a jeweled dollop of Pomegranate Salsa instead.
Pizza is a common meal in our house as the trick-or-treaters come knocking. This Ricotta Pear Pizza is a seasonal way to celebrate the evening.
Crispy Buttermilk Chicken is baked alongside Squash Biscuits, Wilted Greens and if you are feeling frisky Fried Green Tomatoes. Double up the Squash Biscuits so that you can smoother them in Sausage Gravy the next day. Extra Fried Green Tomatoes would be happy to join that brunch meal as well!
Pecan Tilapia makes for an easy weeknight meal especially paired with the Creamy Roasted Potatoes, Sweet Potatoes + Apples.
Of course, Halloween week would not be complete without the Pumpkin Parfaits or some snack treats to bring to parties such as the Kale Chips, Popcorn, Apples + Nuts.
