Start roasting the potatoes. While they roast, saute the vegetables. When everything is almost done, cook up your eggs. Serve the eggs on top.

Excellent use of leftovers for breakfast, especially when paired with an egg. Roast the potatoes in the oven to save time. Toss in any other leftover veggies such as Brussels sprouts or green beans.

Easy Runny Eggs

We like a runny egg yolk in my home, but sometimes flipping an egg over easy will increase the risk of the yolk breaking and inevitably cooking the whole darn thing. This method makes a simple fried egg a bit easier to master without the flipping.
