French Toast with Apples

Prepare all of the components to the French toast. While the first piece sears, chop up the apples and saute in a separate pan alongside. Serve the French toast and apples with a dollop of creamy yogurt or coconut cream.

French Toast

French toast can come together very quickly, even on a fast weekday morning for just a couple people. But, if you do not have 15 minutes to spare make a big batch on the weekend. Freeze individually and heat in a toaster or oven until heated through. Serve with fresh fruit and a dollop of yogurt.

Make this gluten-free with your favorite GF bread or dairy-free by using orange juice instead of milk.

Apple Saute

Apples are sweetest and crispiest in autumn, but they store well into the summer and therefore you will see them available throughout the winter into spring. Because they are not quite as farm-fresh in the winter, we prefer chopping them up and cooking them. We also leave the skin on since this is the source of the greatest fiber and nutrients, but that of course is optional.
