Apricot Roast Chicken with Sweet Potato Fries + Kale Chips

1. Soak the apricots. Preheat the oven.
2. Stuff the chicken and roast.
3. Prepare the sweet potatoes and kale. If possible, roast alongside the chicken once you reduce the heat to the lower temperature.

Apricot Roast Chicken

White wine soaked apricots steam the roast from the inside to create a moist scrumptious roasted chicken sauced up with a puree of those same steam driving apricots.

Sweet Potato Fries

Sweet Potato fries have a bit more of a nutritional boost than their white potato counterparts. Roasting them brings out the natural sweetness, which makes these fries an extra lovely treat to eat.

Kale Chips

Kale chips are probably our favorite way to make kale. Roasted with a light drizzle of olive oil, salt and black pepper, if you so choose. They are simple to make and addictive to boot.
