Chipotle Delicata

This lovely narrow squash does not require peeling to enjoy it roasted as the skin is fairly thin. Tossed with chipotle and a pinch of cinnamon takes it from simple to fabulous.

Ingredients

  • 1 delicata squash, medium, about 1-2 pounds
  • 1 onion, small, sliced
  • 1 teaspoon chipotle pepper, minced up or powder, more or less to taste
  • 1 tablespoon olive oil
  • ½ teaspoon salt

Serving Size: 2 People



 

Preparation Instructions

Preheat the oven to 375.

Cut the ends off the squash. Cut lengthwise and scrape out the seeds and membranes. Slice into “C” shapes, about 1/2 inch thick.

Whisk together the chipotle and olive oil. Toss in the squash and onion slices.

Spread on a baking sheet and sprinkle with the salt and cinnamon.

Bake for 25-35 minutes until the squash is tender and the onions are starting to gain color.
