Week of January 3, 2016

2016, baby! A new year with new possibilities. Whether you set a resolution or not, his time of renewal is hard to ignore. Often in the world of food + health, you will hear a lot about smoothies and refreshing ways to detox from the holidays. That is a bit too chilly for me. I personally would prefer to sip on hot beverages and slurp up soups. So, my promise to you this month is at least one soup or similar every week. In addition, the meal plans this month will indeed refresh with veggie focused goodness.

Also, next week, I am launching a program that will inspire meal planning for each of you! I am a bit nervous as it is all new goodness and it means you will hear from me more often, too. If that thought completely bugs you, please drop me a note letting me know lilly@lillystable.com and I will do what I can to send you less emails.

For this first official full week of January, let’s start with my promised soup. Split Pea Soup takes the chill away from any day and if you have a ham bone leftover from recent celebrations, it is the perfect way to use it up. Give this soup a bit of sparkle with the Caramelized Lemon + Pistachios Topping as well.

Lettuce have a bit of nourishing fun with these Lettuce Turnip the Beet Wraps. Serve them with roasted Sweet Potato Fries and a playful Lemon Poppy Seed Dressing.

Another meatless dish this week are the Jamaican Black Bean Burgers (make a bunch a freeze them for a later in the month meal) paired with the Jamaican Sweet Potato Salad. This salad is lovely for leftovers especially when taken on the go with the Coconut Kale Salad.

The Coconut Kale Salad can also make an appearance with the Coconut Salmon and Coconut Braised Squash. Extra salmon? Fold it into this simple Salmon Salad Sandwiches to take on the go.

For a simple, bright and a touch spicy weeknight meal, toss the Orange Roasted Chicken with the Chipotle Delicata Squash and Creamy Ginger Kale Salad

Okay- I am going to hop on the smoothie bandwagon if only for a brief moment with these hearty
Banana Nut Smoothies. Starting with room temperature bananas can keep it a bit warmer, or keep it warm with the PBJ Oatmeal alongside.
