This is also fun to use for a make-your-own dinner party. Just lay out the fillings and show people how to roll up their rolls. If you are making to take on the go, roll up, package and then saute the green beans. The Red Chili Green Beans are good hot or cold on the go. Skip the salmon rolls to make this meal vegan.

Spring Sushi Handrolls

These seaweed wraps come together quickly once all of the ingredients are ready. You can even make it a sushi party by preparing your favorite seasonal veggies into strips in advance as well as any other additions you enjoy in your sushi rolls. Place everything at the table and let each person make their own.

Smoked Salmon Sushi Handrolls

One of my favorite combinations of cream cheese & smoked salmon is folded into a sushi handroll becoming almost a small sushi burrito you can hold in one hand and take with you on the go. Substitute whatever green veggie you may have available, including baby spinach, snap peas or lettuce. Just plan to thinly slice them in strips. Skip the cream cheese if you would like these dairy free.

Red Chili Green Beans

Green beans are tossed in a skillet over high heat with a bit of water until they are steamy. Toss in the red chili paste and a couple extras for a fast Asian side dish.
