from Braised Fennel, Turnips, White Beans & Blood Orange Quinoa, the Week of April 3, 2016.
View the next recipe for this meal.

Cook quinoa up in a bath of water and orange juice to give a tangy, citrus undertone. When done, toss in segments of oranges for even more delight. While blood oranges add a unique flavor, most any other orange will work too if you cannot find this rosy variety.

Ingredients

  • ½ cup quinoa
  • ½ cup water
  • ½ cup orange juice
  • ¼ teaspoon salt
  • 1 blood orange

Serving Size: 2 People

Preparation Instructions

Rinse the quinoa in a wire mesh strainer.

Place the quinoa, water, orange juice and salt in a saucepan with a lid over medium-high heat. As soon as it comes up to a simmer, reduce to low and cover for 12-15 minutes until the quinoa uncurls slightly. They will have a bit of a bite, but should no longer feel crunchy when they are done.

Meanwhile, slice the ends off of the blood orange. Cut off the skin, including the white pith close to the flesh. Roughly chop the orange into chunks, removing any seeds along the way.

Toss the oranges in with the quinoa and serve.
