Orange Granola

Orange zest is key to this recipe. A microplane will help you obtain this the best, but the tiny part of a box grater can work too. Alternatively, use a vegetable peeler, peel the skin off of the orange avoiding the white pith. Chop it up as finely as possible.

Oats are naturally gluten-free, but are often processed in plants with gluten grains. If you are highly gluten sensitive and know that oats effect you, plan to seek out the gluten-free varieties.

Ingredients

  • ½ cup coconut oil, or other nut or vegetable oil
  • ¾ cup honey, or agave (for vegan)
  • 1 orange, zest & juice
  • 4 cups rolled oats , (not instant)
  • ½ teaspoon salt, or a tad more if you prefer
  • ½ cup flax meal, ground, optional, but a nice fiber boost

Preparation Instructions

Preheat the oven to 300.

In a large baking or roasting pan, combine the wet ingredients* oil, honey and orange juice- be sure to zest the orange prior to juicing, see commentary for zesting tips. Toss in the rolled oats. Sprinkle in the salt and flax seed meal. Toss well to combine.

Place in the oven for 20 minutes. After 20 minutes, add in the orange zest, toss and return to the oven. Reduce the heat to 250 and toss the granola every 20 minutes until lightly toasted. Typically it can take about 2 hours or more depending on how crunchy you like it.

Cool in the same pan before transferring to a storage container.

Store in an air-tight container for up to 2 weeks. It will last longer if stored in the refrigerator.

*Quick Tip: Melt the coconut oil for easy measuring. After using the measuring cup with the oil, fill it with the honey. The honey will slide right out.
