Smoked Trout Cream with Spicy Cucumber Soup and Squash Pancakes

1. Shred the squash, salt and drip drain.
2. Make the cucumber soup and chill.
3. Squash out the squash shreds and whip up the pancakes.
4. As they sear, make the Smoked Trout Cream.

Smoked Trout Cream

Mmm… Smoky Trout mixed into creaminess. Make this thicker by using all cream cheese or smoother with all strained yogurt or sour cream. You can even make it decadent with creme fraiche.

Spicy Cucumber Soup

Bright & creamy with hints of a jalapeno spice that plays with the cooling effects of the cucumbers. Add a handful of chunky pieces towards the end and then blend it as smooth as you desire. If you start with cold cucumbers you won’t have to chill it quite as long. Taste the cucumber skin prior to chopping, if it is good keep it on if it is too bitter feel free to peel the cucumber first. Try this dairy-free by substituting almonds or cashews for the yogurt and water or nut milk for the milk.

Summer Squash Pancakes

These are a favorite way to use up the abundance of summer squash or zucchini, whether yellow or green. These pancakes store nicely, just toast them up to enjoy the next day for breakfast or in a lunch on the go. With only a few tablespoons of batter the pancakes are mostly veggies rather than a traditional pancake. If you prefer more of a batter-based pancake, simply double the flour, egg and cheese.
