Tomato Basil Scramble with Pesto Butter

Prepare the pesto butter to start or use leftovers. In other words, it can be made ahead. Make the scramble and toast. Dollop the pesto butter in the scramble and/or spread on the toast to serve.

Pesto Butter

A little butter, cream cheese and pesto already blended are whipped together to become something much more. If you have leftover pesto simply whisk in 1/4 cup into the cream cheese and butter. The rest of the instructions will be the same. A food processor or mortar & pestle are required for this spread.

Tomato Basil Scramble

This can be vegan with tofu & nutritional yeast or simply vegetarian with eggs & parmesan. Both ways are a super tasty way to start your day with fresh tomatoes and basil.

Whole Wheat Toast

Add this to any breakfast or a bowl of soup or a dinner that needs a bit more fiber. Be sure to use a bread that uses whole wheat flour as the first ingredient. Avoid enriched whole wheat flour which is basically white flour stripped of its nutrients with some brown coloring and vitamins added back in. May as well start with the real thing including the bran and wheat germ. Also, enjoy your toast with just a bit of real butter rather than a dollop of fake trans-fat laden margarine or butter lightened with vegetable oils. Just eat a bit of it and enjoy every bite!
