Feta Stuffed Meatballs with Skillet Zucchini & Potatoes with a Tomato Plate

Simmer the potatoes. While they are cooking, ball up the meatballs and stuff them with the feta chunks. Cut and sauté the zucchini next and then the potatoes when they are done cooking in the water. Once everything is cooking, slice an arrange the Tomato Plate.

Herb flecked ground beef, bison or turkey are wrapped around a small chunk of feta, making for a delightful little surprise in each bite. Flax meal serves as a quick & easy replacement of the typical bread crumbs and egg. If you do not have it handy ground oatmeal could work too.

This luscious tomato dish is from my childhood summer dinners. Slices of the richest, juiciest seasonal tomatoes are ideal for this dish. The rest of the recipe is just a few things that are nice to sprinkle on top. Add more or less of each, to taste.
