Start by slowly cooking the pork. While it cooks, prepare the salsa, chipotle cream, and the remaining taco ingredients. As soon as the pork is ready, assemble the tacos or set up a bar of the toppings and allow each diner to assemble their own. Skip the Chipotle Cream to make this dairy-free.
Simmered until the pork falls apart, this works well on stovetop, in a pressure cooker or crock pot. The poaching liquid is reduced down afterwards for extra flavor. The most involved part is shredding the pork, find a buddy to get the job done faster.
Jewel seeds from the pomegranate make a delightful fresh salsa. Adjust the spiciness as desired. If you like it mild, start with just a bit of the jalapeno and then add more to taste.
Whenever you use sour cream on a Mexican dish, try this instead to add a bit of spice and cooling at the same time. We use yogurt to get a bit more natural acidophilus in our diet, but sour cream works too. You can buy chipotles in adobe sauce in a can. Just blend the peppers to make a sauce that is easy to use in recipes. If you want to skip the can you can find tasty chipotle powders such as from the Savory Spice Shop as well.
