In the meantime, this week’s meal plan is all about the savory possibilities as the holiday season gets into full swing. Many of us are heading to a party or few and I always recommend bringing a vegetable something such as the Avocado, Pear + Spinach Salad, simply cut up the avocado at the last minute. The Caramelized Onion, Apple + Hazelnut Salad or the Coconut Kale Salad are two options that travel well, too.

Of course, a slightly richer appetizer is sometimes required such as the Pomegranate Coconut Shrimp Cocktail or the Chipotle Goat Cheese Log with Pecan Crackers.

In between all of the hustle and bustle I am typically searching for some nourishing comfort foods. The Shredded Pork Tacos with Pomegranate Salsa and Chipotle Cream are rather satisfying and crockpot simple. Meanwhile the Squash Spoonbread is spoon-dipping goodness and easy when paired with any of the salads this week.

Then the casserole-style, make ahead Winter Squash Lasagna can go to a potluck or serve it more than once for your weeknight family meals.

Maybe you have leftover Sweet Potatoes from Thanksgiving? Try these Sweet Potato Pancakes with Ginger Pears + Persimmon Whipped Cream.

The Jewel Quinoa is one of those easy dishes that is worth making a big batch of and then adding to breakfast with simple Ginger Pears, for lunch with leftover Coconut Kale Salad and for dinner with the Avocado, Pear + Spinach Salad.
