The Food
The holiday season has officially begun! A time where every departure from your home can be an invitation to delicious temptations. In between the growing festivities, being at home can feel rare & exhausting… it makes nutritious, quick to the table meals feel mandatory to rejuvenate. I hope to offer some reprieve through quick meals or big dishes of goodness that require easy leftovers.
For those with extra cranberry sauce, or if you didn’t feel you had enough recently, make up a batch of Star Anise Cranberry Sauce. This is perfect way to doll up a rather simple Cranberry Bok Choy Stir-Fry with Poached Tofu and Noodles or Brown Rice.
The crockpot always makes life easier, especially with a batch of Shredded Beef that simply tops oven baked Winter Nachos.
A pinch of dill & a spoonful of capers dolls up the simple Caper Dill Tilapia roasted alongside roots for the Roasted Beet & Blue Cheese Salad.
The Butternut Mac n Cheese is comfort food at its most seasonal this week. With a bit of effort to roast the squash it makes a big enough batch to have leftovers for another dinner or two. The Kale Caesar can also be made ahead, just reserve the Croutons and add them just before serving.
Whenever I eat Thanksgiving dinner, I find myself wondering why I don’t eat sweet potatoes more often? The Orange Tahini, Roasted Pear & Sweet Potato Kale Salad answers this question and is especially lovely tossed with the Fig & Feta Bulghur Salad. Leftovers are perfect for lunch.
Tossing whole, lightly pricked all over sweet potatoes in the oven makes an easy veggie boost for meals. The puree is well suited smeared into Sweet Potato & Black Bean Quesadillas to take on the go for lunch or topped with the Shredded Beef for an additional dinner. Chunks of leftover bread are soaked in a sweet potato custard for a breakfast Sweet Potato Bread Pudding.
