Caper Dill Tilapia with Roasted Beet & Blue Cheese Salad

Roast the beets to start. Prepare the dressing and other salad ingredients in the meantime. Arrange the fish, place it in the oven as soon as the beets are about 5 minutes away from being done. Toss the salad together while the fish cooks. Serve the salad with the hot fish as soon as it comes out of the oven. French bread is perfect to dip into the salad and caper-dill sauce, if desired. Substitute your favorite gluten-free carb (Garlic Seared Polenta, anyone?) instead.

Okay. This is not exactly a recipe, but rather sometimes the best pairing for your meal is a crusty loaf of French bread. My family lineage is French, what can I say crusty bread seems more appropriate then not. So, here it is.

Let’s call it a reminder. In addition, here are a few tips on how to store it, keep it fresh, or use it up. Whenever possible try to find those crusty gorgeous whole-grain varieties.
