Start with roasting & mashing the sweet potatoes. Leftovers of the Chipotle Sweet Potatoes would be even easier. Assemble the quesadillas, sear in the skillet and serve.

To take to go: Assemble fully and place in a toaster oven or microwave until heated through.

Sweet Potato & Black Bean Quesadilla

Leftover cooked sweet potatoes and black beans are perfect for a vegan quesadilla. Add cheese if you love it, otherwise mashed & cooked sweet potatoes help seal the tortillas together.
