Mango Sausage & Greens

Sweet dried mangoes are tossed in to brighten up an otherwise simple Sausage & Greens dish. Occasionally you may be able to find sausage links with bits of mango in it- certainly use it for an extra boost of mango fun.

Ingredients

  • ½ lb sausage, about 2-3 links
  • 3 slices dried mango, unsweetened
  • 1 tablespoon coconut oil
  • ¼ cup coconut milk, or coconut water or water, instead
  • 1 bunch chard, or other dark leafy greens
  • ½ onion, roughly chopped

Serving Size: 2 People



 

Preparation Instructions

Place the sausage links in a skillet over medium heat. Cook for about 8 minutes, flipping over at least once while they cook. Remove.

While the sausage cooks, prepare the vegetables:
Roughly chop the onion.
Thinly slice the chard.
Using scissors or your fingers cut/tear the dried mangoes into bite size pieces.

When the sausage is finished searing, add oil to the pan and the chopped onion. Saute for 8-10 minutes until they start to wilt slightly. Toss in the dried mangoes and the coconut milk/coconut water/water.

Meanwhile, slice the sausage into pieces. Add the sausage to the onions and saute until each is cooked in the center.

At the end, fold in the sliced chard. Toss all of this over the heat until the greens are wilted.

Serve over brown rice or even a whole-grain pasta.
