Brown Butter & Walnut Broccolini

from Blood Orange Fish with Brown Butter-Walnut Broccolini, the Week of February 12, 2017.
View the previous or next recipe for this meal.

Butter is browned into nutty sweetness with a crumble of walnuts and then is tossed onto lightly steamed broccolini.

Ingredients

  • 2 tablespoons butter, unsalted
  • ¼ cup walnuts, crumbled
  • 1 bunch broccolini, trimmed
  • 1 pinch salt
  • 1 pinch black pepper, to taste

Serving Size: 2 People

Preparation Instructions

Using two skillets, place the butter in one and bring up to a slight simmer over medium heat.

In the other skillet, add the trimmed broccolini, a generous splash of water (1/4 cup or more) and cover with a lid- over high heat.

Once the foam appears in the skillet with the butter, reduce the heat to medium-low. Swirl the pan periodically and continue to simmer until brown bits appear. Add the walnuts and shake the pan to coat and cook slightly. Reduce the heat to low.

Check the broccolini by cutting it with a fork or biting a small piece. When the broccolini is cooked to your desired tenderness, remove and shake off any liquid. Toss into the brown butter & walnuts.

Serve immediately- hot & steamy.
