Strawberry Granola Lavender Parfaits

Make the granola in advance. Prepare the lavender syrup ahead. The morning you want to eat this breakfast, whip the lavender syrup with the yogurt and layer the granola and fresh strawberries with the yogurt as desired.

Strawberry Granola

Strawberries make the granola sweet, a bit tangy and low in refined sugars, but the flavor is subtle. If you need even more strawberry action, add a handful of dried strawberries to highlight the fruit a bit more in this tasty make ahead breakfast.

Lavender Yogurt with Strawberries

Several years ago Rachel’s Organic, made a lavender yogurt I loved, except I found it a tad too sweet for my taste. This is my version by infusing honey with lavender and swirling it into thick, greek style plain yogurt. Thinner yogurt works too, but when it is thick the honey sauce works a bit better.
