Asparagus Soup with Cheese Toasts

While the asparagus and onions start to saute, assemble the Parmesan Toasts. As soon as the soup is pureed, place the toasts in the oven. If taking on the go, package the toasts separately. The soup and the toasts are both delicious, hot, chilled or room temperature.

Asparagus Soup

Brilliant green asparagus soup tastes as bright as it looks. We enjoy ours a tad chunky, but if you prefer a smoother silkier soup simply strain through a wire mesh strainer. It is also lovely hot or chilled.

Cheese Toasts

Just imagine— oozy, drippy cheese on crispy toasts. Although, they are pretty darn yum at room temperature for a lunch on the go, too.
