The duck will take anywhere from 2-3 hours to cook depending on its size. After the duck is prepared work on the Wild Rice Dressing. The Smoky Orange Sauce can be prepared ahead of time, use half the called for broth and the whisk in the strained drippings at the very end. Serve this meal with a full Holiday meal including salad and other vegetables.

Roast Duck

Crispy skinned, moist, flavor packed duck is a beautiful change from your typical protein. The best tool for roasting a duck is a meat thermometer as it is the best indication of when it is cooked, and not overcooked. We used a Muscovy duck, but this recipe can work for Pekin as well.

The hearty flavor of Wild Rice contributes as a high-fiber side dish to more rich dishes.

There are several methods for cooking Wild Rice. Use your favorite or try one of the methods listed.

Fruit & Nut Wild Rice Dressing

A medley of dried fruits and savory vegetables make this a lovely side for Roasted Chicken or Duck. Use your favorite dried fruits and nuts.

Smoky Orange Sauce

Perfect for drizzling on Roast Duck or Chicken. Lapsang Souchong Black Tea is the best for this and we highly recommend a good quality variety such as from Seven Cups. Instead of the broth use the strained drippings after the duck or chicken is roasted.
