Winter

Fruit & Nut Wild Rice Dressing

 

A medley of dried fruits and savory vegetables make this a lovely side for Roasted Chicken or Duck. Use your favorite dried fruits and nuts.

Ingredients

  • 1 onion, chopped
  • 6 stalks celery, roughly chopped
  • 2 tablespoons butter, unsalted, or olive oil
  • 2 dates
  • 4 dried apricots, or more, roughly chopped
  • ¼ cup cranberries
  • ¼ teaspoon salt
  • 8 chestnuts, more or less, roasted, fresh* or jarred
  • ¼ walnuts, broken in pieces
  • ¼ cup pecan, broken in pieces
  • 3 cups wild rice blend, dried

Serving Size: 4 People



 

Preparation Instructions

Preheat oven to 375.

Saute the onions and celery in the butter or olive oil until softened.

Chop the apple or pear into pieces. Toss into with the onions for the final few minutes of cooking.

Peel the clementines or orange and cut in half or quarters. Pull apart the segments. Chop all of the dried fruit and nuts.

Fold together the cooked wild rice, dried fruit, crumbled chestnuts, walnuts, pecans, clementine/oranges, onion & celery.

Bake in a serving dish for 20-30 minutes covered. Stuff into a chicken or duck for the final 10 minutes of cooking if desired. Otherwise, serve hot directly from the serving dish.

*Roast clementines: Preheat the oven to 400. Score each one on the flat side with an “X” mark. Place in the oven in on a metal baking sheet for 10 minutes, toss lightly and continue to bake checking every 5-10 minutes until the chestnuts burst slightly. Cool. Peel and enjoy.
