Grilled Shrimp & Okra with Cajun Aioli and Dirty Rice

Start boiling the brown rice, if it is not already cooked. Soak skewers if using wood. Saute the veggies for the Dirty Rice. Start grilling the okra. Whip up the Cajun Aioli. Skewer the shrimp and grill. Finish the Dirty Rice, serve altogether with the Cajun Aioli.

Be careful. This dish can be addicting. Our vegan variation omits the chicken livers, pork and other meat, so consider this “almost” dirty rice since we just focus on melting the veggies into the rice and a bit of spicy cajun seasonings.

Tired of slimy okra? Try grilling it instead! The smaller the okra the more tender it will be. Larger, older pieces of okra may have a woody texture, so reserve this method for the small ones.

Forgive me. This is more of a fake aioli, but with the yogurt it gets a boost of good probiotics so who’s complaining? And there are also no raw eggs. Cajun or even blackening spices work well to spice up this dip. Use Vegenaise for a vegan/dairy-free option.

Grilled Shrimp Kebabs

A quick sear on a grill gives shrimp an instant flavor boost. Smaller sized shrimp work well strung on skewers preventing them from falling through the grate on a grill. A light season of salt & pepper is all you need, but add a few of your favorite spices as desired.
