Braised Cabbage, Apples & Beer Brats

 

Do you like sausage & sauerkraut?
Octoberfest comes together in this meal of Autumn apples & cabbage oven braised with German beer & bratwurst sausage. It takes only moments to prepare as everything is tossed together and then it will roast in your oven for about an hour with minimal labor on your part.

To make this gluten-free use a hard-cider rather than beer.

Ingredients

  • 1 cabbage, small, sliced (about 5-6 cups)
  • 1 onion, sliced in strips
  • 1 apple, sliced thinly
  • 1 carrot, large, peeled and thinly sliced
  • 1 teaspoon caraway seeds, optional
  • ½ teaspoon salt, or more to taste
  • 2 tablespoons apple cider vinegar
  • 1 cup beer, or hard apple cider
  • 4 bratwurst sausages, links

Serving Size: 4 People



 

Preparation Instructions

Preheat oven to 425.

Lay the shredded cabbage at the base of a roasting pan. Sprinkle on the sliced onions, apples, carrots, caraway seeds, salt and apple cider vinegar. Cover tightly with foil. Bake for 15 minutes. Reduce the heat to 325 and continue to bake with the foil on for 30 more minutes.

Meanwhile, sear the bratwurst sausages on each side until slightly charred.*

When the cabbage is ready remove the foil, add in the sausage and pour in the beer.

Bake for 15 more minutes uncovered until the cabbage is your desired wilted-ness and the sausages are firm.

Alternative- even easier- directions.
If you don’t care for sear marks on your sausage, simply add them to the cabbage dish 15 minutes earlier.

Roast the cabbage 15 minutes at 325, add the sausage and roast 15 more minutes before removing the foil and adding the beer or cider. Bake for 15 more minutes uncovered.
