The almost prickly greens of radishes are tossed with a bit of spinach and dosed with a tangy-sweet strawberry balsamic vinaigrette. The bitter & sweet combo is enhanced with the crunchy slices of radishes.

Chicken is crusted in roughly minced pistachios and then baked at high heat to create crispiness. If you feel pistachios are a bit pricy, try mixing up half almonds with the pistachios or pecans. The ground rosemary lends an earthy boost of flavor, but finely minced fresh rosemary works well too.

Toasted Almonds give crunch. This salad is tasty with or without an extra sprinkle of creamy cheese like goat or salty such as feta.

Poached Pears with Spiced Ricotta

These luscious pears would be a lovely end to a meal or a fruity sweet way to start your day. Instead of ricotta this can be made with greek or strained yogurt.

If you want to make this for dessert instead, try white wine or champagne in place of the juice.

You can also skip the spices and try a few tablespoons of the mulling spice that you keep meaning to use.

Poached Salmon

A quick white wine poached salmon adds a touch of sweetness to a flavorful fillet. Reducing the sauce for a few minutes after poaching intensifies all of it. Be sure to use a white wine that you would also enjoy a sip of drinking.
