Spinach Crepes

Spinach, onions, and ricotta come together to be stuffed into crepes. Occasionally, I see crepes for sale if you don’t have time to make your own, but alternatively try filling fresh lasagna noodles. A little sauce or a sprinkle of a favorite cheese is a nice touch, but not necessary either. Using brown rice lasagna noodles or brown rice flour in the crepes will make this dish gluten-free.

Split Pea Soup

Gloomy Winter days call for Split Pea Soup. If making it vegan, add smoked paprika to taste. Alternatively, highlight it with chunks of ham for the meat lovers version. This soup works well to simmer with a ham bone for additional flavor, although it is delicious without. Soak the split peas overnight and this dish will only be 45 minutes to cook, otherwise, plan on about 1-2 hours of simmering.
