Blueberry Smoothie

The secret to the creamy thickness in this Blueberry Smoothie are the frozen bananas. So chunk up your bananas and freeze them at the start of the week for a creamy chilled smoothie a day or two later. If fresh blueberries are not a fabulous price substitute another berry or go to the frozen aisle for blueberries. To make this dairy free use the creamy topping on the coconut milk. Alternatively, just substitute the yogurt for fruit juice instead.

The protein powder and ground flax meal are just suggestions for an extra boost of protein and fiber. Feel free to leave them out or add more or less to taste.

If you want to impress, but have little time… this is the dish to make! A crockpot can work to make the flavorful broth as well. The seafood is just a last minute prep and addition. It is traditional to serve it with a rouille that can be stirred in for another layer of flavor.

Bourbon Sweet Potato Soufflé

This simple soufflé is temptingly simple and the essence of bourbon with the sweet potatoes is so fabulous that even if it flops and fails to puff ever so magically you will still love it. The sweet potato needs to be roasted and mashed prior to making this recipe. The eggs fluff up best from room temperature. Pour hot (not boiling) water over the eggs to warm up slightly if you pulled them out of the fridge. Also, remember to avoid getting the yolk into the whites when separating them eggs. A good practice is to separate the white into a small dish, check for yolk and then pour into the larger bowl. Repeat cracking into a smaller bowl with each egg.

Beets are braised in broth or wine until tender and packed with flavor. The greens are not to be missed and can be braised the whole time with the beets if you prefer them tender or just tossed in at the end to retain more of the bright green color.
