This is a great way to use up Cilantro when you have too much and can be frozen for a later use.

Cinnamon Granola

Make a big batch of this basic granola recipe ahead. It will last for a couple weeks on your counter or pantry or place it air-tight in your fridge and it will last even longer.

This takes less than 5 minutes to prep, but you will need to be home for a couple of hours to stir it occasionally and watch for when it is done.

Shredded beets, carrots, grapefruit and blood oranges create a colorful palate of crimson & amber splashed throughout the lettuce. If blood oranges are a challenge to find, simply use regular oranges.

Citrus Pear Breakfast Quinoa

Lately, quinoa has been our porridge of choice rather than oats. The best part about this dish is I can load it up and decorate it with my favorite oatmeal toppings, but the protein burst from the quinoa sustains me a bit longer in the morning. Zest of orange or even lemon with a bit of the juice will liven up the earthy flavor of quinoa. Chopped pears or even apples cooked in at the end gives this dish even more to love.
