You know those olive bar’s you see in fancier groceries or cheese shops. Step up to one and select a nice pile of the goodies to top your pizza. You may get lucky and find the sun-dried tomatoes there too. Make your own or buy dough, slather it with a sun-dried tomato spread, cheese and then decorate as you please.

Orange Oatmeal Pancakes

Leftover oatmeal? Save it and create a whole new breakfast the next day. A bit of orange zest is mixed in to brighten up the flavor. If you want a drizzle of honey in the mix, it is entirely optional since every diner can also add more sweetness to their personal taste. If gluten intolerant seek out the oats that specify they are gluten free.

This classic Thai take out dish is easy enough to make at home. You can even chop all of the veggies and make the sauce ahead. Ten minutes before you want to serve dinner, boil the noodles, stir-fry the veggies and toss it altogether. If you want to avoid the fish sauce, use half tamari or soy sauce with water and a pinch of salt instead. Feel free to use tofu instead of shrimp as well for an easy vegetarian substitute for this dish.

Panettone French Toast

My Mother-in-law and I decided in the grocery aisle to make this for a Christmas breakfast. Suddenly a man joyfully came up and said that it is the most magical breakfast ever. He was so enthusiastic we practically invited him to join us. The trick to this simple dish is to keep the heat low, because the panettone is a bit sweeter than traditional bread that is used for French toast, therefore increasing the possibility of burning the outer part. Since it is sweet, be light with the toppings. I prefer yogurt whipped cream to balance it a bit with a light snowy sprinkle of powdered sugar or a tangy Sweet Orange Sauce.
